Miles Davis once said “Don’t play what’s there. Play what’s not there.” For those of us without a degree in music theory, that statement probably doesn’t mean much, but if translated to “grape-speak,” it has incredible merit. The world of wine, and more specifically Pinot Noir, has become more and more…well, predictable. The element of surprise and the exploitation of subtlety can create a symbiotic melody on the palate. It’s this composition of flavor that you don’t find very often.
The synergy between grower and winemaker is perhaps more important with Pinot Noir than any other grape, especially where minimalism in the cellar is involved. Paul Wilkins and his partner in Alta Maria, vineyard manager James Ontiveros, make decisions in the field, fine-tuning the fruit with surgical precision. We have a gut feeling if the King of Cool were alive today, this is definitely a wine he would “get.”
