Christian Drouin's "heart of the lion" beats only for first-class Calvados. He takes particular care in selecting fruit from small family-owned orchards and then uses ex-sherry and port casks to age the rich, full bodied double distilled ciders. The result is lush baked apple and pear with waves caramelized nuts of light smoke. If you don't have a bottle of old vintage Calvados around, you're truly missing out.
