After two decades in the Tequilla business, proprietor David Ravandi brought one of the first USDA certified tequillas to the U.S. Made from 100% blue agave grown using ancient Aztec sustainable farming methods, then stone oven roasted and pot distilled, these are some of the cleanest and purest Tequillas we've ever tasted. Uno (Blanco) is fresh, earthly and silky smooth, while Dos (Resposado) is creamy, integrated and balanced and Tres (Anejo) is rich, fudge-like and complex. 123 Organic Tequila begins its journey to your glass as sweet juice pressed from the roasted heart of the Blue Agave. Like pulque, the sacred ceremonial drink of the Aztecs, this sweet mosto is fermented and then transformed by the careful art of distillation into the purest 100% Blue Agave tequila. Grown on the same ancient volcanic soils that once sustained the Aztecs, the agave plantations that flourish on their hacienda near the town of Tequila have been sustainably cultivated for centuries and from these pristine estate fields comes the expressive character of 123 Organic Tequila (Uno Dos Tres).

    123 Organic Tequila Blanco (Uno) ­Unaged and clean with intense aromas of fresh agave. Vibrant with lemon peel, black pepper, and minerals. Smooth as silk, with a slight sweet kick on a lengthy finish, which is so easy it's criminal. 123 Organic Tequila Reposado (Dos) ­ Aged 6 months in oak, which gives it a very light color and no real hint of wood. Salted caramel, creme brulee, and toffee notes. There's agave on the nose, but it quickly dissipates as you head for a light dessert course, complete with minty anise finish. Most complex tequila in the line up. 123 Organic Tequila Anejo (Tres) ­ After eighteen months in oak, Tres' wood character is more prominent, and on first blush it is heady on the nose with tannin and wood oil notes. This fades after time in the glass, revealing richer versions of those characteristics in the Reposado: caramel and some chocolate notes. A lovely anejo, it really opens up when you give it time.
