Dessert Wines
The perfect ending to a wonderful meal, nothing is more decadent than a dessert wine, served with dessert or as the dessert itself. While styles vary widely from country to country, these wines share the commonality of relatively high sugar and alcohol content. Some producers of dessert wines will allow the grapes to ripen (to the extreme) on the vine or even freeze. Some grapes are allowed to develop botrytis or “Noble Rot,” which can add complexity. Others are made by adding raisins to grape juice and still others have added alcohol which arrests fermentation and leaves sugar levels high. No matter how they’re made, these are some of the world’s most supple elixirs. Widely known examples include Sauternes from France, the Hungarian wine fit for nobles, Tokaji Aszú, Italian Vin Santo and German Trockenbeerenauslese.
