The 2010 is jaw dropping. It's just begging for a lobster tail and drawn butter to transport you to Champagne nirvana. James Suckling lost his cool for it, noting “A firm and vivid Champagne with a precise, focused palate. Full-bodied and dry. It’s very layered and bright with light pineapple, peach, praline, cooked-apple and stone aromas and flavors. It’s very subtle and focused at the end. Integrated with richness and high acidity. Good depth. Reminds me of the 1995. Very clean. Solid. Lovely to drink already, but will age nicely. Sold!

Quite literally the Godfather of modern winemaking, Dom Perignon was a monk who lived at the Abby of Saint Pierre d'Hautvillers in the mid 1600s. While he was mesmerized by the bubbles captured in sparkling wine he did not (contrary to popular belief) invent sparkling wine. He did however spend nearly 50 years of his as the Abby's Cellar Master employing the most modern and thoughtful winemaking techniques. His efforts to "make the best wine in the world" are so legendary that his name lives on in perpetuity. Today the wine house of Dom Perignon's Chef de Cave strives to honor the namesake by producing a wine that is revealing of the lands' very soul. He's got a great canvas to work with; the picturesque rolling hills of the Marne Valley are the stuff of dreams for Champagne winemakers. Champagnes that set the world standard… talk about a legacy!

Wine Spectator:
A graceful Champagne, featuring fragrant notes of toasted brioche and grilled nut that are more subtle on the palate, transitioning to a rich underpinning layered with a pure chime of tangerine and accents of candied ginger, toasted saffron and lime blossom. This bundles a lot of concentrated flavor into a lithe frame. The fine mousse caresses the palate through to the lasting finish. Drink now through 2035.
