The Paring cuts a fine line between sweet and savory that leaves you wanting to lick the blade. Candied blackberry, unsmoked tobacco, licorice and crushed rock each play a part in this balanced and refined red. The tension between tannic structure and bright acidity could, as they say, be cut with a knife!
The 2015 Red Wine is the Bordeaux blend of the estate and is 50% Cabernet Sauvignon, 20% Cabernet Franc, and the balance Merlot and Petit Verdot, all from declassified Jonata lots. Its deep, inky purple color is followed by a rich, powerful wine that's loaded with notions of blackcurrants, unsmoked tobacco, graphite, and crushed rocks. With background oak, full body, ripe yet present tannins, and a great finish, it's going to keep for at least 7-8 years.
