The 2016 Hendry Cabernet is one for the history books. Hailing from a warmer year, it is sourced from three benchland crops that receive a blanket of cooling San Pablo Bay fog each morning. The wine is richly ruby with velvety notes of black berry preserves, dark chocolate, savory eucalyptus and spicy oak. The tannins are bold upon opening but meld beautifully into place with an hour of decanting. It is rich and full on the palette making it a perfect partner for marbled meats, and bold cream dishes.
The 2016 Cabernet Sauvignon is made from 100% Cabernet Sauvignon, aged for 21 months in French oak, 90% new. Deep garnet-purple colored, it sings of chocolate-covered cherries, warm plums, cassis and candied violets with wafts of spice cake and tilled soil. The palate is both full-bodied and charged with energy, revealing bags of black fruit and floral layers framed by firm, finely grained tannins, finishing long and beautifully fragrant. Beautiful wine! 1,050 cases were made.
