The concept emerged as a thanks and a service to the restaurant industry that supported and drove the success of those coveted brands. Matt Dees wanted to craft a wine that was not only built to pair with a wide range of edibles, but was also immediately approachable upon the pop of the cork at the table. Sourced primarily from younger vines on estate vineyards in Ballard Canyon and Santa Rita Hills, along with a select few trusted vineyards around the state, the Paring is a true expression of classic California style, made with the same intention and care that goes into the wines of Jonata & The Hilt Estate.

The Bordeaux blend, the 2017 Red Wine is based on 50% Cabernet Sauvignon, 20% Cabernet Franc, 20% Merlot, and 10% Petit Verdot. Deeply colored, with notes of blackcurrants, tobacco, leafy herbs, and earth, it has medium-bodied depth and richness on the palate, ripe tannins, and a character-filled, balanced style that's ideal for drinking over the coming 5-7 years or so.
