2017 The Paring Red California
The nose on this vintage is utterly fascinating with its mix of lifted black fruit, savory green herbs and dark notes of grilled bread, espresso and anise. Mouth-filling red fruit and black plum engage the entire palate, while gentle, dusty tannins lead the way to an incredibly long and precise finish. The play between sweet and savory is matched by the dance of bright acidity and tannic structure. The picture of balance, this is one to keep on hand for all occasion.
The paring is pedigreed accessibility at its finest, with the team behind Jonata & The Hilt running point. The concept emerged as a thanks and a service to the restaurant industry that supported and drove the success of those coveted brands. Matt Dees wanted to craft a wine that was not only built to pair with a wide range of edibles, but was also immediately approachable upon the pop of the cork at the table. Sourced primarily from younger vines on estate vineyards in Ballard Canyon and Santa Rita Hills, along with a select few trusted vineyards around the state, the Paring is a true expression of classic California style, made with the same intention and care that goes into the wines of Jonata & The Hilt Estate.

The Bordeaux blend, the 2017 Red Wine is based on 50% Cabernet Sauvignon, 20% Cabernet Franc, 20% Merlot, and 10% Petit Verdot. Deeply colored, with notes of blackcurrants, tobacco, leafy herbs, and earth, it has medium-bodied depth and richness on the palate, ripe tannins, and a character-filled, balanced style that's ideal for drinking over the coming 5-7 years or so.
