The X Novo Pinot Noir is mainly destemmed and fermented as whole berries in open-top tanks with minimal punch-downs. The élevage is also 18 months in approximately 60% new oak barrels without noticeable impact. They are plummy, spicy, meaty, minerally, "wild" and complex in the glass.
