Pechuga" is a traditional style that has been made for generations, usually produced for family consumption at ceremonies and festivals. Distilled three times in copper pot still with the final distillation including cooked poultry marinated in fruits, herbs and spices that hangs in the top of the still. The recipe is a closely guarded family secret. As for the spirit itself, it's astonishing! Complex spice notes meld seamlessly with earthy smoke aromas. The palate is dense and packed with roasted fruits, minerality and a wisp of smoke that permeates through the long, soft finish. This is one of the great Pechuga styles we've tasted in recent memory.
