How do you know Philippe Livera is a no-nonsense farmer and winemaker? Just before you descend into his frigid cellar in Gevrey-Chambertin, there’s what appears to be an old bathtub and an array of intimidating implements… it’s a deer cleaning station (as evidenced by the homemade venison links that dangle above his barrels). It’s his version of vineyard pest control. His hands-on approach extends to his grapes with several of his vineyard parcels just steps from his front door, and with his impossibly long and slow malolactic fermentations – seriously, his cellar is bone-chilling – he coaxes the maximum complexity from his precious grapes. Just don’t wander among his vines wearing antlers…
