Aromas of rich honey, vanilla and caramel, with a hint of apple and sweet baking spice. Smooth and peppery, with notes of oaky spice, earth and toffee, accented by sherry and dried fruits, that leads to a long finish.

In the plush, green fertile soil of the Hudson Valley there is a long history of growing grains, and prior to Prohibtion dozens of distilleries utilitzed the crops of barley and rye to make whiskey. Jeff Baker and his team are resurrecting this tradition of finely crafted spirits from the region. With a robust crop of grain at their disposal they’ve been producing whiskey for several years now, and using a unique method of aging to blend and mature their whiskey. With Dave Pickerell (of Whistlepig and formerly Maker’s Mark fame) consulting they’ve landed on the Solera system for maturation. Solera refers to racking barrels and consistently removing small amounts for bottling and replenishing with younger liquid, usually on an annual basis. The average age of the Solera at Hillrock is more than 6 years. As they ready their whiskey for bottling they finish it in Oloroso Sherry casks for an added touch of complexity.
