  2010 Gagliole Colli Della Toscana IGT

The Gagliole IGT, made with Sangiovese and Cabernet Sauvignon grapes, is the premier wine produced by this Swiss-owned estate in the Chianti town of Castellina.

Starting with the 2011 vintage, it is now made via a process called "integral vinification," where the entire fermentation process takes place in small barriques, where the skins stay on the wine for 45-60 days. In this way, the aromatic potential of the grapes is fully preserved and the extraction is more gentle.

This wine has an intense ruby red color, with deeply spiced aromatics with notes of cloves, cinnamon, plums, anise and black cherries. Then come hints of chocolate and walnuts. On the palate all the elements are wonderfully balanced, with dense, sweet tannins. This is akin to a top neighboring estate's very best expression of Chianti Classico. It will pair very well with something as simple as a steak fried in butter and sprinkled with chopped fresh thyme, or wild boar shoulder braised for many hours in Chianti.
