This is so deep and dark because the vines that made it are 50 years old. This raised some eyebrows around our tasting table because it has much more sweetness and depth than most Bourgognes.

How do you know Philippe Livera is a no-nonsense farmer and winemaker? Just before you descend into his frigid cellar in Gevrey-Chambertin, there's what appears to be an old bathtub and an array of intimidating implements… it's a deer cleaning station (as evidenced by the homemade venison links that dangle above his barrels). It's his version of vineyard pest control. His hands-on approach extends to his grapes with several of his vineyard parcels just steps from his front door, and with his impossibly long and slow malolactic fermentations - seriously, his cellar is bone-chilling - he coaxes the maximum complexity from his precious grapes. Just don't wander among his vines wearing antlers…
