After a deep dive into soil and sun science, they found a plot in Winters, CA, for this ancient heirloom grain. This corn is fussy and low-yielding but worth every bit of drama for the decadence and elegance. Aged in primo Seguin Moreau char #3 barrels, it gets its toasty oak, vanilla, and rich character the old-fashioned way. Imagine rich amber hues with fresh orange zest and Madagascar vanilla bean aromas, a smoky charred oak mid-palate, and a finish of cinnamon bark and ground peppercorn.
