We can't have an Aussie vermouth without one using Shiraz as the base. The wine Australia is most famous for is a natural partner for this botanical array. First blended with a touch of Chardonnay then macerated with pepper berries, Wattle seed, thyme, cinnamon, clove, star anise, ginger, and orange - this is as complex a red vermouth as we've come across. Blend this with Starward Whisky (and Fred Jerbis Bitter) for a down-under take on a Boulevardier: simply smashing!
