Saison is a fascinating rum, taking some of their cues from the finest cult producers and bottlers of Caribbean spirits out there. This Barbados bottling is aged three years in American Oak at the distillery before being transported to Cognac where it is further aged in French Oak - first in used Limousin barrels, then finished in Troncais barrels which implores a truly harmonious, lifted tone throughout the rum. You'll find notes of tropical fruit, freshly ground Blue Mountain coffee beans, and chocolate custard. With accenting notes of light molasses and a hint of fruit and floral this is a complex glass to behold and drinks well above its price. The perfect move to aged rum for a budding aficionado.
