Selephant Kokuto Shochu

Selephant is the nickname of Master Distiller Selena Nishihira, who also happens to be a professional musician. Distilled from rice koji (Japan’s famous fungus) and black sugar, this Shochu is made in the traditional fashion with 100% clay pot fermentations. The depth of flavor is tremendous in this spirit, distilled only once and then rested for a year in stainless steel. It’s a taste of terroir that’s truly unique, with pithy sweetness, wet slate, sushi rice nuances and serious umami. Selena recommends enjoying it with a little sparkling water.
