Since its founding in 2010, Sonoma County Distilling Company (AKA 1512 Distilling Co.) has created outstanding craft whiskeys from grain to glass in a small, rapidly expanding space in Sonoma County, CA. Distiller Adam Spiegel is a dedicated student of the craft, constantly learning and evolving, who works hard to hone his skills.
One could say the company does things in an unconventional manner. It's rare to have a distillery (craft of otherwise) start out making only whiskey, and not sourcing juice from some of the big distilleries to generate revenue while the new make spirits age. That is just what Sonoma County Distilling has done. Rather than crafting whiskeys from others' juice, they take the time to concentrate on their grain to glass production and aging, and that approach is yielding fantastic results.
Produced from 100% rye and aged in a variety of sizes of new, charred American oak then blended and finished in used barrels - a technique borrowed from Cognac production - the rye shows complexity in its youth often reserved for older spirits.
