Sparkling Wine

Sparkling wine is an umbrella term that covers bubblies from anywhere around the world (only those made in France’s Champagne AOC can be labeled as Champagne). The elixir of celebration starts as a rather acidic base wine and gets a bit of sugar called dosage to reinvigorate the yeast and make the wine sparkle. There are various methods for taking the wine from still to sparkling; méthode champenoise is the most highly prized.
